This guy hiding on top of the tree is making a special sweet type of alcohol from the palm tree. They usually tie the flowering stem before it opens and cut it and do some special techniques that is too detailed to discuss here.

Now you see him cut the stem and put wet clay on the cut so that it does not seal up. The light white liquid that seeps drip by drip through the stem after some 3 to 4 weeks of cutting and working on the same stem...yes several weeks is required until it starts to produce the liquid. The liquid ferments naturally in the clay pots placed over the stem during the day or night.

The clay pot is being placed on the stem by the worker. He usually collects the liquid from the pot twice a day. The liquid is sweet & sour but very effective. It will keep you drunk for sometime before it wears off.
